Homebrew - Double IPA V2

In April we brewed a Double IPA that turned out very well. However at the time I made some notes about how to improve it. Fast forward 6 months of brewing and the it was time to take the challenge. Can I do it better? I sure as hell will get drunk trying to.

The goal was to get the taste without and inch of crap in the bottle. I added a teaspoon of Irish moss to the boil and left it in the primary for 2 weeks. Dry hopped (with a bag) in primary after 4 days and racked after another 12. I drank a good gulp when I syphoned it into the secondary and after only two weeks it tasted amazing. These changes were based on my experiences last time and the successful things that I have tried since the first batch. I tried it again when I bottled it and had to stop myself from just straight up drinking a load. I can't wait to drink the final product!

Ingredients: Whiteley Series Double IPA, Extract kit from True Brew
Brew:        14 Oct 2011, OG 1.070
Rack:        30 Oct 2011 (16)
Bottle:      12 Nov 2011 (13), FG 1.016, ABV 7.46%
Ready:       03 Dec 2011 (21) 
Summary:     Primary 16 days, Secondary 13 days, Condition 21 days

This beer came out very similar in taste to the last time we made it. Which is to be expected given it was the same ingredients. As planned I ignored the timings for fermenting that the recipe suggested and went wit what I thought was sane. Unlike last time we ended up with barely any crap in the bottles. The beers have all been carbonated and even the one I drank a few days ahead of schedule tasted amazing. Proves I have learned a thing or two in the first year of brewing. This beer is exactly what Gemma likes in an American IPA, very hoppy and flavorful.
