Homebrew - Archer's Orchard Traditional Hard Cider

We got double the apple juice concentrate from the online store so we re-sterilized the carboy as soon as we bottle the first batch and went again. We could have pitched on to the old yeast cake but we did not know how well that would work so we just repeated everything from scratch.

Ingredients: Archer's Orchard Traditional Hard Cider, from concentrate (Saflager S-23 Dry Lager Yeast)
Brew: 24 Apr 2011
Bottle: 03 May 2011 (9)
Ready: ???
Summary: Primary 9 days, Condition ???

Due to people visiting we could not let the cider sit for 17 days like last time. What we should have done is left it longer but instead we bottled it early. The cider did not taste as good as the first batch and it was very highly carbonated. It would shoot out of the bottle when you popped the cap. We are sure this is because there was a load of sugar left in it when we bottled and it probably wasn't conditioned long enough.
